Intention – When purchasing a bag of coffee, understanding a company’s intention to purchase sustainable green coffee is important. Farmers need to receive fair pay for their labor and understanding global warming’s impacts on these ecosystems needs attention and investment.

Green Sourcing - Sourcing green coffee in today’s world can be quite a challenge. Due to climate change, a recent global pandemic, and (trade restrictions) a multitude of other factors in the supply chain of coffee and other commodities have been severely disrupted. This, and other factors, have resulted in a change in the way farmers and exporters do business. Traditionally, larger companies are able to purchase coffee through forward contracts. Forward contracts allow businesses and farmers to develop relationships and have a deal made in advance of coffee production. Smaller companies must purchase ‘spot’ coffee. Spot refers to coffee not purchased under these conditions and costs are generally much higher in comparison per pound.
Roasting – Coffee is an art that takes skill and countless hours to become proficient. Even at a high level of proficiency, many factors must be taken into consideration in order to produce a desired outcome. Roasters must understand the green coffee they are working with - its origin, size, moisture content, density, processed method (washed, natural, honey, extended fermentation, anaerobic, carbonic maceration, etc) in order to receive a desired outcome – flavor, mouthfeel, experience.
